Cashew-Stuffed Chocolate Covered Dates

INGREDIENTS
20 medjool dates, pitted 40 dry roasted, lightly salted cashews ̈7 oz vegan refined sugar-free chocolate (white, dark or half-half), melted

Dried rose petals

METHOD
Stuff each date with 2 cashews.
Pour the melted chocolate in a glass.
Put the stuffed date on a bamboo skewer and dip the date in the melted chocolate. Let excess chocolate drip off, then place the date on a plate covered with parchment paper and add toppings of choice. Repeat with remaining dates.
You can mix white and dark chocolate to create different patterns.
Let set in the fridge for about 30 minutes. Note: This is a very easy way to make dates look and taste fancy, a perfect holiday gift for your dear ones! Store in an airtight container in the fridge for 3-5 days (but not if you are using edible fresh flowers).
