I’m launching my second cookbook in spring 2018, first in Finnish but hopefully in other languages too. It’s going to be about vegan baking—something I’m very passionate about at the moment!
INGREDIENTS
Roasted Plums
About 5 plums
½ tbsp maple syrup
½ tbsp lemon juice
¼ tsp ground cardamom
Pinch of salt
Caramel Sauce
¹⁄³ cup coconut cream
3 tbsp maple syrup
Pinch of salt
Overnight Oats
1 cup coconut yogurt or other creamy plant-based yogurt
¼ cup rolled oats
2 tbsp hemp seeds
1½ tbsp chia seeds
½ tsp cinnamon
Sliced figs & berries, for serving (optional)
METHOD
Mix overnight oats ingredients together and place in a sealed container in the fridge overnight. Preheat oven to 360°F/180°C.
Roasted Plums
Slice plums plums and remove the stones. Place sliced plums and other ingredients into a baking tin and mix thoroughly. Bake for 30 minutes or until plums are soft and juicy.
Caramel Sauce
Pour maple syrup and coconut cream into a saucepan and bring to a boil. Reduce heat a bit and let simmer for about 5 minutes until the sauce is caramel brown and thick, mixing the sauce every now and then. Add a tiny pinch of salt and taste (add more if you want salted caramel flavor).
To Serve
Swirl a generous amount of caramel sauce, roasted plums and figs into overnight oats and top with more roasted plums and other fruit/berries of choice. You can use leftover roasted plums and caramel sauce to make toasts, or use as delicious oatmeal toppings!
