**Requires a waffle maker and ice cream machine
INGREDIENTS
Waffles
200 g wheat flour
1 tsp baking soda
75 g sugar
100 g vegan butter
180 ml sparkling water
½ vanilla pod (core)
25 g dark chocolate
1 pinch of salt
Ice Cream
200 g fresh blackberries
100 g fresh juicy peaches
200 g soy yogurt
100 g whipped soy cream
Optional: syrup or other sweetener of choice
METHOD
Waffles
Heat vegan butter carefully until liquid. Chop chocolate. Mix wheat flour, baking soda, sugar, vanilla pod core and salt in a bowl. Add water and vegan butter alternately until homogeneous. Add chopped chocolate and let the dough rest covered for about 20 minutes. Preheat the waffle maker and bake 5 waffles.
Ice Cream
Peel the peach, remove core and cut in small pieces. Add blackberries and mash a bit. Add soy yogurt and whipped cream. Stir and add optional some sweetener of choice. Let do the ice cream machine do the rest.
