The Holy Grail Ingredient
Mesquite powder! This protein-rich powder is my holy grail. It adds such nutritional value and depth of flavor to my breakfast bowls and sweet treats. I’m so in love with the sweet, earthy, nutty taste of this stuff. You can use it as a flour alternative for raw recipes as well! Definitely worth trying for yourself. My kiddo eats it straight from the tube.
Food Hack
When making a salad, try bathing thinly sliced veggies in ice cold water for at least half an hour. Your veggies will be the crispiest, crunchiest yummy raw veggies ever.
Any Other Secret Ingredients?
My other discovery is picadillo spice— a South American spice mélange with spices like cumin, jalapeño, chipotle, oregano, cinnamon and allspice. I love to sprinkle it on top of my avocado, smoked bell pepper and hummus sandwich, and on steamed veggies and baked potatoes.
What You Can't Live Without
Definitely fresh herbs. I use plenty of them in my dishes, but not everyone does. Fresh herbs add vitamins, antioxidants, flavor and freshness to almost any dish. Creating your own (indoor) herb garden makes it so much easier to include herbs in your meals. Oh, and don’t be shy when it comes to adding herbs; herbs are your friends.
Unicorn Bowl Recipe
INGREDIENTS
Overnight
1 tbsp walnuts
1 tbsp sunflower seeds
1 tbsp pumpkin seeds
1 tbsp hemp seeds
1 tbsp white sesame seeds
1 tbsp black sesame seeds
1 tbsp poppy seeds
1 tbsp chia seeds
1 tbsp sultanas
1 tbsp desiccated coconut
Small glass of coconut water
2 scoops of coconut cream (thick part of coconut milk)
½ tbsp spirulina powder
2 tbsp sweetener of choice (you don’t really need it, though, because there are soaked sultanas and bananas in the bowl as well)
In the Morning
½ banana, chopped into small pieces
4 raspberries, crushed in
2 tbsp oat milk
Pinches of all mentioned seeds
½ passion fruit
Blue cornflower petals
Edible violets
METHOD
Soak all overnight ingredients in a glass jar. Make sure everything is covered with the coconut milk. Add a little more coconut water if needed. In the morning, transfer pudding to a big bowl and add banana. Mix well. Pour mixture into a beautiful bowl and make sure to pour in the center of the bowl. Now, pour the raspberry mix in the bowl, any way you like it. Add passion fruit and finish with pinches of seeds, petals and flowers.
Rainbow Ice Pops
Red Ice Pop
Blend a handful of fresh strawberries, a handful of frozen cranberries and 1 date until smooth. Pour in ice pop mold.
Orange Ice Pop
Blend 1 peeled orange, a handful of mango cubes and ½ tsp sea buckthorn powder until smooth. Pour in ice pop mold.
Yellow Ice Pop
Blend 2 big handfuls of fresh mango cubes and juice of ½ lime until smooth. Pour in ice pop mold.
Green Ice Pop
Blend ½ kiwi, ¼ avocado, ½ banana and a bit of green spirulina until smooth. Pour in ice pop mold.
Blue Ice Pop
Blend ³⁄4 banana, a bit of very concentrated blue chai tea and spirulina until smooth. Play with the color until you achieve the desired blue! Pour in ice pop mold.
Purple Ice Pop
Blend 2 big handful of blueberries, a good gulp of oat milk and 1 date until smooth. Pour in ice pop mold. Pour the leftover smoothie in a jar and make a rainbow smoothie.
