Let's Talk About Citrus!
I just love citrus fruits. I always put citrus fruits at the base of my fruit platters so they “perfume” the plate. I rub lemons and limes on cut pears and apples to stop them browning. Lemon or lime sorbet or segments of orange or grapefruit are really great palate cleansers after a meal. They usually help stop sugar cravings.
Cherry Ripe Cookies
Ingredients
150 g rolled oats, ground
50 g rolled oats, whole
70 g whole wheat spelt flour
30 g organic cocoa powder
100 g coconut sugar
100 g rice malt syrup
100 g melted coconut oil
125 g sour dried cherries
125 g
70% vegan dark chocolate
50 g organic coconut flakes, ground
2 tbsp hot water
1 tsp baking soda
Method
Preheat oven to 320°F/160°C. Place the oats (ground and whole), flour, cocoa, sugar and coconut in a bowl and mix to combine. Place the syrup and oil in a saucepan over low heat and cook, stirring, until heated. Combine the baking soda with the water and add to the pan. Pour into the oat mixture and mix well to combine. Add cherries and 100 g chopped chocolate. Place measured balls of the mixture onto baking trays lined with nonstick baking paper. Bake for 12 minutes on the middle rack. Allow to cool on baking trays for 5 minutes before transferring to wire racks to cool completely. Melt remaining chocolate and drizzle over cookies. Makes 24.
Cherry Smoothies
Ingredients
1 banana
200 g frozen cherries
3 heaping tbsp coconut yogurt
Method
Blend until smooth. Garnish with fresh cherries. Cherry Ripe Food for Fuel I try to find the freshest and best quality whole foods available. Generally, if I am eating a rainbow of organic fresh fruit and vegetables, I know I am fueling my body with all the nutrients, vitamins, minerals, proteins, carbohydrates and fiber it needs. Nuts, seeds, chickpeas, beans and lentils are also really important in balancing out my diet.
Beetroot Bread
Ingredients
3 cups bread flour
1½ tsp pink salt
1½ tbsp vegetable butter
1½ tbsp sugar
1¼ cups beetroot juice
7 g dry yeast (1 sachet)
Method
Place all ingredients in a bread maker and set to dough. When complete, the dough will be moist. Turn out onto baking paper and cut into 6 equal portions. Grease 6 mini pans, and with wet hands place one portion of dough in each pan. Set oven to 355°F/180°C and bake for 30 minutes.
